September 12, 2003, Newsletter Issue #157: Old Style German Potato Salad

Tip of the Week

For a salad Oma Ida-style, you need:

2 lb potatoes
1 cup dill slices or picles (+ 1 cup of pickle juice)
1 apple
½ lb Leberkaese (substitute Bratwurst or Kielbasa, if you cannot find it)
4-8 Tb mayonaise (low fat is better)
½ lb low-fat yoghurt or sour cream (fat free is better)
salt, pepper, curry, paprika
4 hardboiled eggs (optional)
2 pairs of Bockwurst and mustard (optional)

Cook potatoes, peel, let cool, dice. Cut dill slices and Leberkaese into stripes. Dice apple. Mix sauce: pour 1 cup of dill slice brine or pickle juice into bowl, add mayonaise, yoghurt or sour cream and spices. Add potatoes, apples, dill slices and meat. Sprinkle paprika on top. Garnish with hardboiled egg slices (optional). Cover and let sit for ca. 2 hrs. for flavors to mix. Keep refrigerated. Serve with hot Bockwurst and mustard. This salad is especially nice with a cold Bavarian beer. This salad was served at many of my own parties, and there were hardly ever any leftovers. It really is surprisingly good.
