Tip of the Week

Kartoffelbrei (German Mashed potatoes)
Ingredients:
5 potatoes 2 tablespoons butter, divided 1/8 teaspoon pepper 1/2 cup sour cream 1 tablespoon horseradish 2 teaspoons parsley, chopped
Directions:
Peel and quarter potatoes. In a saucepan, cook in boiling salted water until tender; drain and mash, adding 1 tablespoon butter and pepper. Add sour cream, horseradish, and chopped parsley. Whip with an electric mixer until fluffy then place in a serving bowl. Top with 1 tablespoon butter before serving. (serves 4)
