Deutsche Blaubeertorte
This is an easy recipe for a great blueberry pie.
Ingredients:
3 cups sifted all-purpose flour
1 3/4 cups sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 1/3 cups milk
2 large eggs
2 teaspoons vanilla
1 teaspoon freshly grated nutmeg, or to taste
Grated peel of 1 lemon
1 1/2 cups chopped nuts
3 cups blueberries
Sifted confectioners´ sugar, for garnish
Directions:
Preheat oven to 350 degrees F. Butter and flour a 9- x 12-inch baking pan. Sift flour in bowl, add 1 1/2 cups of the sugar, baking powder & salt. Blend in shortening & milk. With an electric Beat batter with mixed, 3 minutes. Beat in eggs, vanilla, nutmeg & lemon peel. Beat for 2 minutes. Stir in nuts & pour batter into the prepared pan. Top with blueberries. Sprinkle with remaining sugar. Bake kuchen for 40-45 minutes. Cool, cut into squares, dust with confectioners´ sugar. Yields 12 squares
