Try German Tilsitt cheese. "Deutscher Tilsitter" is a yellow pungent cheese named after the German town of Tilsitt. It is sometimes made with caraway seeds. Its taste might remind you of a monterey jack cheese. Or how about some "Harzer Kaese"? This is a crumbly, dry, low fat cheese with a grainy texture. It is sold in rolls. Originally, this cheese is a specialty from the Harz mountains, but it is available all over Germany. It is best eaten fresh, as it gets smellier and spicier with age. If it gets too old, it runs and stinks. Finally, do not miss "Quark". "Quark" is a typical German white soft cheese, which is served for lunch with potatoes, on bread with honey for breakfast, or with fruit as a dessert. It ressembles yoghurt, but is less sour and not as solid. Get a container in a supermarket for a refreshing, healthy (and cheap) snack. It is somewhat similiar to ricotta cheese, too, but not as solid, as it contains more water.
