Tip of the Week

A typical German cheese variety is "Quark," a moist, spreadable soft cheese with a neutral taste. It is called "Topfen" in Bavaria, slightly more solid than "Quark," and used in cheesecakes. Both are very hard to get in the United States, so you would have to substitute either sour cream or neuchatel cheese to achieve a similar result in baking a German cheesecake.
