This dish is popular in Southern Germany and Austria. You need: 5 ripe apples, 1/4 stick of butter, 9 oz. plain flour, 3-5 egg yolks, salt, 1-2 tbsp. sugar, 1/2 tbsp vanilla extract, 3 cups & 5 tbsp. of milk, 3-5 egg whites, 1 stick of butter or margerine, sugar for sprinkling. - Peel and dice apples, stew in butter, let cool. In a bowl, mix flour, egg yolks, some milk, salt, sugar and vanilla extract. Stirr constantly to avoid lumps. Mix batter with apples. Whisk egg whites until stiff, fold into batter. Heat fat in frying pan, pour in enough batter to cover the bottom. Fry the underside to a light yellow. Tear into small pieces with two forks. Turn pieces frequentlu until brown on both sides. Set aside. Repeat with more batter. Serve sprinkled with sugar. Takes about 10 minutes.

Ingredients:
4 eggs, 2/3 cup flour, 1 teaspoon salt, 2/3 cup milk, 3 tablespoons butter.
Directions:
Butter a heavy 10 inch oven-proof skillet. Preheat oven to 450 degrees. Beat the eggs with a fork to blend. Slowly add flour, beating constantly. Stir in salt and milk. Pour the batter into the skillet and drop the butter by teaspoonfuls into the batter. Bake at 450 degrees for 15minutes - reduce heat to 350 degrees and bake another 10 minutes. Remove from oven and sift powdered sugar over top. Serve with heated maple syrup.

Ingredients:
2/3 cup all purpose flour
2 tsp. sugar
1/4 tsp. salt
4 eggs, lightly beaten
1/2 cup milk
2 Tbs. sugar
1/4 tsp. cinnamon
1/2 cup unsalted butter
2 apples, peeled, cored and diced
Directions:
Sift first 3 ingredients together in a bowl, set aside. Combine next 2 ingredients in a large mixing bowl. Stir in flour mixture gradually & beat smooth. Combine sugar & cinnamon in a bowl, set aside. Melt 1/4 cup butter in a heavy nonstick skillet over medium high heat. Saute apples 4-5 minutes, stirring frequently until just tender. Toss cinnamon mixture with apples. Melt 1 Tbs. butter in a heavy 6 inch nonstick skillet over medium high heat. Add pancake batter to about 1/4 inch depth. Cook 1 minute. Sprinkle 1/4 of the apples over batter. Pour enough batter over the top to just cover apples. Cook Eierkuchen until bottom is lightly browned. Turn & cook 1-2 minutes more. Keep warm until ready to serve. Repeat process with remaining batter and apples. Serve immediately with butter and maple syrup. Serves 4 people.

Ingredients:
1 egg, beaten 1/2 teaspoon salt 2 tablespoons oil 1 cup flour 1 tablespoon warm water 1 teaspoon oil 1/4 cup SUN-MAIDĐ Raisins 2 tablespoons water 8 apples, sliced 1/2 cup sugar 1/3 cup butter 3/4 cup dry bread crumbs 1/3 cup walnuts, chopped 1 teaspoon ground cinnamon 1/2 cup sugar 3 tablespoons butter, melted
Directions:
In a large bowl, combine together beaten egg, salt, oil, and flour. Add warm water and blend to form a soft dough. Remove the dough from the bowl and knead for 10 to 15 minutes, or until smooth. Place in a large bowl and brush with oil. Cover and set aside for 30 minutes.
In a small bowl, soak raisins in water. Place thinly sliced apples in another bowl and sprinkle with sugar. Melt butter in a small skillet over medium heat. Stir in dry bread crumbs and cook until browned, about 5 minutes. Combine the bread crumbs, the raisins (with liquid), chopped walnuts, cinnamon, and sugar; mix well.
Roll the dough very thin, brushing with melted butter as needed to keep pliable. Spread the apple mixture on top leaving a 2-inch border all around. Roll up jellyroll fashion and place on an ungreased baking sheet curved into a horseshoe.
Brush surface of the roll with melted butter. Bake at 400 degrees for 20 minutes then lower the heat to 350 degrees. Brush again with remaining butter. During the last 5 minutes of baking, sprinkle the raisins mixture evenly on top.
