What is "Mettwurst"?

Mettwurst is a pork sausage. The word "Mett" is the medieval German word for lean, pounded pork. There is 'Grosse Mettwurst', which is coarse in texture, and 'Feine Mettwurst', which is pink and smooth enough to spread.
